Red Beet Eggs

The first time I made red beet eggs in Texas most people had no idea what it was or never saw them before. It is very common back in Pennsylvania, so it was odd to me that most people never had them before. Every year for Christmas it was one food that was on the table.

I love hard boiled eggs. But when you combine them with beets, vinegar and a little bit of sugar it transforms them into something beautiful, healthy and delicious. To make them even better cut them in half and top them off with a little salt and pepper. I am making a version I learned back in PA that I will attach below but I am making it healthier by using all organic ingredients. One of the healthiest ingredients in this dish is the beets. Beets are loaded with phytochemicals and other bioactive compounds. Beets contain nitric oxide and are also rich in minerals such as potassium, sodium, phosphorous, calcium, magnesium, copper, iron, zinc and manganese. I found a research article explaining how beets can help promote health.

The research data supported the health-promotional properties of beetroot and its byproducts, as a potential therapeutic treatment for various metabolic disorders including hypertension, diabetes, insulin resistance and kidney dysfunction. In human studies to date, beetroot supplementation has been reported to reduce systolic and diastolic blood pressure, inhibit platelet aggregation, improve vascular and endothelial function, reduce blood glucose and improve insulin homeostasis.

Beets are a great food to add to a healthy diet. Remember eating well is just one of the three factors that lead us to a state of homeostasis. Continue to manage stress daily, keep exercising and keep the spine healthy with regular chiropractic adjustments.

Recipe-

  • 1/2 dozen pasture raised hard boiled eggs
  • 1 can small organic whole beets 15 oz
  • 1/3 cup white vinegar
  • 1/3 cup organic cider vinegar
  • 2 tablespoon organic sugar
  • 1 small organic red onion
  • 1/2 teaspoon salt

Directions-

  1. Boil eggs for about 9 minutes, then let them completely cool.
  2. Peel eggs and add them to a large container with a lid
  3. Thinly slice onion into rings
  4. Add the onion, can of beets, vinegar, sugar, and salt. Making sure eggs are completely covered in liquid.
  5. Let sit in the refrigerator for 5 days. The longer they sit the more color and more intense the flavor. Can keep for up to 1 month in the refrigerator.
