Stay Healthy with Non-GMO Summer Corn Salad

It’s always nice to have something refreshing to eat during the summer. This recipe is light, buttery, and delicious. The key ingredient in this recipe is corn. Corn has a special place in my heart because it woke me up to the way Big Agricultural is impacting not only the human species but the farmable land.

Starlink corn was one of the first Genetically Modified foods dating back to the 1990’s. Now GMO corn dominates the current corn production in this country with 98% of corn being farmed as genetically modified. It contains an ingredient called BT, bacillus thuringiensis, which is a toxin meant to break open the stomachs of the insects that consume it to prevent damage to the corn.

I remember growing up back in Pennsylvania and buying corn from roadside stands and often I would find a worm or two during the husking process in the fine hairs of the corn. Now, there is no such thing. I have bought corn many times since then and never a worm. This may sound good but when I realized the corn itself was killing the insects it made me cautious about eating it myself. This led me to question why there is such a rise is certain GI related issues? There is no direct correlation between the two, but I made the choice to avoid GMO corn after learning about this. I am sharing a research article about BT corns impact on butterfly larvae and the impacts of development of the butterfly.

“Consumption of Bt176-maize pollen had adverse effects on life history traits of the common swallowtail. P. machaon larvae fed with Bt pollen had a lower survival, a lower weight increase rate, a longer development time, and lower body weight and smaller wing size as adults, and these effects were significantly associated with Bt pollen density.”

This to me is a great example of “you are what you eat”. Eating well is just one of the ways we stay healthy and in a state of homeostasis. It supplies us energy and nutrition that sustains us through life. It is also important to manage stress, exercise daily and receive regular chiropractic adjustments to keep all joints moving healthy.

Recipe-

  • 6 ears organic non-GMO corn, husked and cleaned
  • 3 large organic tomatoes, diced
  • 1 large organic red onion, diced
  • ¼ cup chopped fresh basil
  • ¼ cup organic extra virgin olive oil
  • 2 tablespoons white vinegar
  • salt and pepper to taste

Directions-

  1. Bring a large pot of lightly salted water to a boil. Cook corn in boiling water for 7 to 10 minutes, or until desired tenderness. Drain, cool, and cut kernels off the cob with a sharp knife.
  2. In a large bowl, toss together the corn, tomatoes, onion, basil, oil, vinegar, salt and pepper. Chill until serving.
