Superfood Salad
We can’t go a month without news of a new super-hero movie or show. The thought of special powers and action-packed entertainment seems to have captivated us. Personally, I find it fun seeing their origins and what helps make these heroes super. But what about our food? Can a food be super?
Simply put, yes it can.
While the term “superfood” is more of a marketing ploy, it is still something that we hear in our daily lives. There are certain foods that could be considered super due to a few reasons. These reasons all have to do with the nutritional content of the food. Whether it is the quantity of different nutrients or the high levels of those nutrients contained in the food, both are a factor on deciding if a certain food qualifies. Some great examples are spinach, kale, blueberries, raspberries, strawberries, eggs (when pasture-raised), and organic nuts. All of these nutrient dense foods can help give us the essential building blocks that our bodies need to perform its daily functions. One of my go to foods of choice is spinach and other green leafy vegetables. Among other things, these green leafy vegetables are great sources of folate, zinc, calcium, iron, magnesium, vitamin C and fiber. In fact, they are a much better source of calcium than the milk and dairy that most of the population think of when they hear calcium. We only absorb about 30% of the calcium we ingest from dairy, but we are also exposed to any of the hormones and dairy proteins that can cause inflammation in our bodies. This doesn’t even consider the added benefits of the other nutrients I mentioned before. Fiber alone helps with our gut bacteria and helps provide the source of energy for them to break it down into vitamin k and other short chain fatty acids to protect us from harmful bacteria.
So, what is your salad’s origin story? How super can you make it? I’ll provide an easy go to option, but I encourage you to experiment with other vegetables and fruits to make it your own. - 3 cups spinach
- 3 sliced strawberries
- ¼ cup blueberries
- ¼ cup organic walnuts
- 2 tablespoon Apple Cider Vinegar and 2 teaspoons InnateChoice OmegA&D fishoil as dressing
