I prefer quick preparation and shorter cook times as my culinary skills are not what would be classified as expert.  With that being said, there are a ton of ways to do this while still keeping them healthy and full of the nutrients our bodies need to get through the day.  The basic rule is to keep the number of ingredients low while avoiding gluten, dairy, and sugars.  Keeping with fresh produce, preferably more vegetables than fruits, and high quality proteins (pasture raised chicken and eggs, grass-fed AND finished beef, wild caught cold water fatty fish, etc.) will help keep you on the right path.

That’s where this meal checks off everything on the list.  It was simple, fresh, few ingredients, and healthy.  The tomato contains a good number of antioxidants, fiber, vitamin C, lycopene, and potassium and the eggs are not only a great source of protein, but they also help raise HDL cholesterol, often called good cholesterol.  It can help start the day, or end it, with the healthy boost needed to optimize your health.

Ingredients
  • 6 large tomatoes
  • 2 tablespoons extra-virgin olive oil
  • Coarse salt and ground black pepper
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, thinly sliced
  • 6 large pasture raised eggs

Directions

Heat oven to 400 degrees. Slice the top third off tomatoes and use a small spoon to remove core and seeds. Arrange in a baking dish, drizzle with oil, and season with salt and pepper. Sprinkle with thyme and garlic. Roast until tomatoes are tender and caramelized, about 30 minutes.

Crack an egg into each tomato and season with salt and pepper. Bake until eggs are just set, 7 to 9 minutes more.
